Gingerbread Cookies in a Jar: An Energy Boost for Trail Lovers

There’s something special about a homemade holiday gift that captures the warmth of the season, and we’ve got a great suggestion: cookie mix in a jar!  

Bonus: pair your gift with a nature-themed cookie cutter for an homage to trails everywhere.

Gingerbread cookies in a jar 

This cookie-in-a-jar recipe makes holiday baking a snap – all you have to do is mix a few wet ingredients into the mix, and you’re good to go! 

Ingredients 

• 2 cups (225 g) all-purpose flour  

• 1/2 teaspoon (3 g) baking soda 

• 1/2 teaspoon (2 g) baking powder 

• 1/2 cup (100 g) light brown sugar, firmly packed 

• 1 teaspoon (2 g) ground ginger 

• 1/4 teaspoon (0.5 g) allspice 

• 1/4 teaspoon (0.5 g) cinnamon 

• 1/4 teaspoon (0.5 g) ground cloves 

• Slice of orange or lemon peel (optional)

How to prepare 

1. Mix flour, baking soda and baking powder, and add to jar. 

2. Mix brown sugar and spices, and add to jar. 

3. Top with orange or lemon peel to keep the sugar from getting too hard. 

4. Decorate with a gift tag with information about how to make the cookies and your warmest holiday wishes. Gift away!

To make cookies 

1. In a large bowl, combine gingerbread cookie mix with 1/2 cup (115 g) softened butter or margarine, 1/3 cup (80 mL) molasses and 1 beaten egg. Mix well. 

2. Roll out dough to approximately 1/4 inch (0.7 cm) thick on floured surface.  

3. Cut desired cookie shapes and place on a lightly greased cookie sheet, 1 inch (2.5 centimetres) apart. 

4. Bake at 350 degrees F (175 C) for 10-12 minutes. 

5. Let cool and enjoy!
