Energizing and Nutritious Snacks: Roasted Broccoli with Parmesan

Healthy winter snacks? Yes, please! A perfect pick-me-up either pre- or post-Trail outing, roasted broccoli with Parmesan cheese is an excellent choice for a side dish or snack in the winter monthsNot only is it delicious, but broccoli also provides a good amount of vitamin C, beta carotene, calcium and iron, giving you plenty of fuel for your winter adventures along the Trans Canada Trail.  

Roasted broccoli with Parmesan cheese 

This roasted broccoli recipe is flavourful and comforting, plus it’s relatively simple to prepare. You can easily omit the cheese if you’d rather go dairy-free. 

Ingredients

• 2 medium crowns (approximately 680 g) broccoli, broken into florets 

• 3 tablespoons (45 mL) olive oil 

• 1 tablespoon (15 mL) fresh lemon juice 

• 1-2 cloves garlic, minced 

• 1/4 cup (20 g) grated Parmesan cheese (optional) 

• Salt and pepper to taste 

How to prepare

  1. Preheat the oven to 425 degrees Fahrenheit (220 degrees Celsius). 
  2. In a large bowl, toss the broccoli with the garlic, olive oil, lemon juice and salt. 
  3. Place the broccoli on a cookie sheet lined with parchment paper and roast for 10-15 minutes until it’s fork tender. 
  4. Remove from oven, sprinkle with Parmesan cheese, and return to oven for 5 minutes. 
  5. Once done, sprinkle with grated pepper and serve. 
  6. Enjoy!
