Fall Flavours: Savoury Pumpkin Dip

October: fall colours, fall vibes, Halloween is coming … we’ve got a quick and easy homemade pumpkin-bean dip recipe for your snacking pleasure.

Savoury Pumpkin Dip 

This savoury pumpkin recipe is a great complement to a veggie plate, pita chips or crackers, or as a sandwich spread. Pumpkin is rich in vitamin A and fibre, and it brings a Halloween-y vibe to your table, so it’s a win-win. Bring this dip along on your next Trail outing or save it for a snack when you’re back home.

Ingredients 

• 1 cup (240 g) pumpkin, roasted and mashed, or canned 

• 1.5 cups (400 g) cooked or canned cannellini beans or chickpeas, drained 

• 2 tablespoons (30 mL) olive oil, plus more to drizzle 

• 1 clove garlic, mashed 

• Juice of 1 lemon (approximately 2 tablespoons or 30 mL)  

• Salt and pepper to taste 

• 1/4 teaspoon (1 g) ground cumin (optional) 

• 2 tablespoons (20 g) roasted pumpkin seeds

How to prepare 

1. Combine all ingredients except pumpkin seeds in a food processor and mix well. Add water to thin out if needed. 

2. Top with pumpkin seeds and a drizzle of olive oil. 

3. Serve and enjoy!
