Days are getting longer, which means more time for Trans Canada Trail adventures! We’ve got suggestions for nutritious and tasty breakfast recipes to pack up and bring along on your morning outings. These recipes also work great as camping breakfasts to make on a camp stove.
Crunchy peanut butter oatmeal
This simple oatmeal recipe only takes a few minutes to make and is chock-full of energy-giving ingredients: peanuts, milk, granola and oatmeal combine to provide a satisfying crunch!
Ingredients
• 2/3 cup (80 g) quick-cooking oats
• 1 cup (250 mL) water
• 4 tablespoons (60 mL) milk or milk powder (optional)
• 4 tablespoons (60 g) creamy peanut butter
• 4 tablespoons (28 g) granola or dried fruit and nuts of your choice
Servings: 2
How to prepare
1. In a small pot, combine oats and water and bring to a low boil.
2. Simmer for 1-2 minutes, then remove from heat.
3. Add milk or milk powder, granola and peanut butter. Stir well.
4. Enjoy!
Warm ginger apple cider
There’s nothing better than enjoying a warm drink on a chilly morning – except enjoying a warm drink on a chilly morning in a beautiful spot outside … after a hike! This simple warm ginger apple cider recipe really hits the spot.
Ingredients
• 3 cups (750 mL) apple juice
• 1/2 apple, sliced
• 1-inch (2.5-centimetre) piece of ginger, thinly sliced
• 3 cinnamon sticks
• 5 whole cloves
Servings: 3
How to prepare
1. Combine all ingredients in a pot and bring to a boil.
2. Reduce heat and simmer for 10 minutes, then strain out the spices and apple slices.
3. Enjoy!
