Camping Food: Grilled Fruit and Vegetable Skewers

It’s camping season! If you’re camping near the Trans Canada Trail, or simply looking for a summery and easy-to-prepare meal to enjoy after Trail adventuring, consider these grilled brochettes. Main course: grilled veggies. Dessert: grilled fruit. Result: delicious on the grill at the campsite or at home!

Grilled vegetable skewers with halloumi

This combination of grilled veggies and halloumi is a crowd-pleaser for all ages.

Ingredients

1 block (250 g) halloumi

1 red or yellow pepper

1 zucchini

1 red or yellow onion

2 tablespoons (30 mL) olive oil

Salt and pepper to taste

Juice of 1 lemon (optional)

How to prepare

1. Soak skewers in cold water for 30 minutes.

2. Cut halloumi, pepper, zucchini and onion into 1-inch (2.5-cm) pieces.

3. Combine all ingredients in a mixing bowl and add oil, salt and pepper, tossing to coat the ingredients evenly.

4. Thread cut vegetables and halloumi onto skewers, alternating ingredients.

5. Grill on high heat for approximately 4 minutes, flipping once to grill both sides evenly.

6. Remove from heat and serve. If you like, add a splash of lemon juice for flavour.

Grilled fruit salad

Choose your favourite summer fruit that will retain its structure on the barbecue, such as strawberries, melon and stone fruit. We used watermelon and peaches, and we were quite happy with the result! This easy camping recipe makes a great snack or dessert!

Ingredients

6-8 cups of summer fruit, cut into 1-inch (2.5-cm) cubes

Ice cream for serving (optional)

How to prepare

1. Soak skewers in cold water for 30 minutes.

2. Thread cut fruit onto skewers, alternating types of fruit.

3. Grill on high heat for approximately 3-4 minutes per side, flipping once to grill both sides evenly.

4. Remove from heat.

5. If you like, remove from skewers and serve over ice cream, or eat the fruit straight off the skewer.

6. Enjoy!
