Fruit Popsicles
Seasonal berries and summer go hand in hand. Fruit popsicles are an excellent way to enjoy fresh berries – they only need a few ingredients and are popular with people of all ages. They make for an excellent frozen treat after your Trans Canada Trail adventuring — or a top-notch way to bribe your kids to head out for a hike!
Fresh fruit popsicles
These tasty treats are dairy- and gluten-free, and super simple to prepare. The recipe below makes four popsicles.
Ingredients
• 2 cups (approximately 500 mL, depending on fruit) fresh berries like strawberries, blueberries or raspberries, or sliced fruit like peaches
• 1 tablespoon (15 mL) honey or maple syrup
How to prepare
1. Purée sliced fruit in a blender until smooth. Add honey or maple syrup.
2. Pour mixture into popsicle moulds and freeze.
3. Serve and enjoy!
Variation: Fruit and yogurt popsicles
For a rich, nutritious option, add 1 cup (250 mL) plain or vanilla yogurt to the puréed fruit with the honey or maple syrup, then follow the same steps to prepare. Enjoy! This recipe makes five to six popsicles.
Variation: Coconut water and fruit popsicles
This ultra-hydrating option uses sliced fruit instead of fruit purée.
Place chopped fruit of your choice – strawberries, blueberries, peaches, you name it — into popsicle moulds and fill the moulds with coconut water. Freeze, serve and enjoy!
