Fuel up for Your Trail Adventures with a Power Bowl

Did you know that March is nutrition month across Canada? It’s a great time to learn more about nutrition and find recipes that are not only delicious but also chock-full of nutrition and energy-giving ingredients. Enter the lentil power bowl! It’s maple season, so we added a maple-infused dressing to accompany it. If we do say so ourselves: yum! 

Crispy, crunchy lentil power bowl with lemon, maple and tahini dressing 

This lentil-based bowl is simple to prepare. Plus, lentils are basically the wonder food of all foods (in this author’s humble opinion). They’re affordable, high in protein and fibre, and contain anti-inflammatory properties. Add fresh veggies and a tasty dressing, and you’re ready to go!  

Ingredients: power bowl 

• 1 cup (75 g) salad greens or chopped kale 

• 1 cup (200 g) brown rice, cooked  

• 1/2 cup (90 g) brown or green lentils, cooked 

• 1 carrot, grated 

• 1/2 avocado, sliced 

• 1/3 cup (55 g) edamame, cooked and shelled 

• 1/4 cup (40 g) daikon or radish, thinly sliced 

• 1/4 cup (40 g) red or green cabbage, chopped 

• 1/4 cup (40 g) broccoli, chopped 

• 1 cup (200 g) cooked green or brown lentils 

• 2 tbsp (20 g) sliced almonds (optional) 

Ingredients: lemon-tahini dressing 

• 1/3 (80 mL) cup tahini 

• Juice of half a lemon, freshly squeezed 

• 1 tbsp (15 mL) maple syrup 

• 1/4 tsp (1.5 g) salt 

• 2 tbsp (30 mL) water – or more, adjusted to your preferred consistency 

How to prepare 

  1. Add all power bowl ingredients to a bowl and mix well. 
  2. To prepare dressing, combine all ingredients and shake well to mix. 
  3. Add 2-3 tablespoons of dressing (30-45 mL) to bowl just before serving and mix well. 
  4. Enjoy!
